Can I wright as good as Anthony Bordain? Hes so cynical and smart, and funny. What do I have to offer? and will this become a faceless honest rendition of what I really think of this business and the reality of what makes it tick (from my perspective) or will this become Face book part two that I can post and discuss my day to day working in hopes of landing another gig or QVC selling nonstick spatulas that double as tongs/chop sticks/spork/QB on the fly "flip" cook book. I hope for somewhere in between. This has been a long time coming, I have a lot to say and I think it can be done in a way that others will gain something. Lets set the record straight, I love this business...food and beverage, is all I know. I grew up in this business and I'm still growing everyday. In fact I need to remind myself this is not a cult it is a job. by that I mean, theres times in social situations that I'm lost without my brother and sisters in the kitchen. holidays that I have rarely the time to spend with friends and family that I would rather be cooking for them than talking with them. The sign of a good bonified cult is one that cuts you away from your family and works you for little or no pay contributing only for a common cause or vision.....F&B!! Lets face it, I make the joke that I dont make plans because some thing always gets in the way. This isnt a business were the Secretary can call out and her /his calls will be forwarded or delt with days later. NO! If the grill guy doesn't show guess who's working it..."sorry folks no steaks and chops tonight the grill guy wasn't feeling well". The show must go on! And luckily it always happens after you have dreams of a long bike ride or quality time with the family (to catch up on that awkward holiday you spent) or just drinking beer on the couch. Why get upset, life is short and I cant prevent or predict the dishwashers not showing up so lets brace ourselves for the worst and be thankful for the best. Here's what to expect- creative, criticism, finance nightmares, staffing, stamina, owners, health inspectors, business partners, Dbag FOH manages, drug addicts, grease traps, shitty equipment..why ruin the rest of the blog, tune in next time for my complaints and triumphs with my latest gig.
